The first prasadam recipe on this blog will be a very simple spinach recipe, as spinach or sak, was Lord Gaurangas favourite preparation!

225g/4oz spinach

125g/4oz ricotta or soft paneer

1tbs oil or ghee

salt and pepper

pinch of nutmeg

pinch of asfoetida




1) Wash spinach in 2 to 3 changes of water and remove tough stems

2)Heat oil or ghee in a saucepan and put in the asfoetida. Cook for a few seconds, then add the spinach and cook over a high heat until the spinach has wilted and is tender.

3)Add the ricotta or soft paneer and stir well.

4) Season with salt, pepper and nutmeg



Spinach is good flavoured with any of the following : lemon, nutmeg, mace, tomatoes, tarragon


Serving Suggestions

This spinach preparation can be offered simply as it is or some other ways to serve this recipe are as follows:

1)Stuffed inside canneloni, drizzled with tomato sauce and baked in the oven

2)Spread on any type of bread

3)Rolled into balls and fried, served with a salad.
